At El Gallo, we are proud to share the rich flavors and traditions of Peruvian cuisine. Founded by the brothers David and Joel Briones, As chefs with deep Peruvian roots and a passion for food, our mission is to introduce the authenticity of Peruvian cuisine to Canada.
We strive to remain true to this essence through a careful selection of imported ingredients and recipes passed down through generations.
Origin
David and Joel grew up in a household where cooking was central to the family. Inspired by their mother, who instilled in them a passion for cooking at a young age, they perfected traditional techniques like preparing Pollo a la Brasa with charcoal and ceramic pots, a tradition they have upheld since 1993.
Their experience of over 25 years includes a culinary journey through kitchens of various origins, such as Italian, Quebec, Canadian, French, and Latin.
El Gallo celebrates authentic flavors and recipes passed down through generations.
The idea for El Gallo was born during the challenges of the COVID-19 pandemic. With a shared vision and the arrival of Mahim Briones In the team, the dream of opening a Peruvian-Canadian restaurant became a reality. Despite numerous obstacles, their unwavering determination and the support of dear friends allowed them to open the doors of El Gallo on December 23, 2020.
Today, El Gallo stands as a testament to resilience, passion, and the unifying power of food. We owe our success to God's blessing and guidance, as well as the unwavering support of our community. It is our honor to serve you dishes crafted with love, tradition, and a commitment to excellence.

Since our beginnings, El Gallo's logo has symbolized our Peruvian roots and our passion for sharing authentic flavors. The original design, inspired by Peruvian culture, reflected tradition and gratitude, accompanying us as we grew as a restaurant.
